food help
A bunch of Erich's friends from high school are coming in town for a friend's wedding this weekend. They have decided to have a little get together Friday night. Since we are the only ones that live in Utah county, it gets to be at our house. Erich thinks we should just serve finger food- stuff that can be sitting out all evening. So, help me plan a menu because Erich is useless in this department. Thanks.

You should make regular salsa, corn salsa and guac because they should all hold up. If you want some meat, you can do meatballs since they can stay warm in the crock pot. If you want to do sandwiches of some sort I think wraps do better than bread sandwiches because they don't dry out as much.
For dessert, I would probably just do bar stuff since it'll hold up well if left out.
Fresh fruit and veggies are always good too.
Costco meatballs with Sweet Baby Ray's BBQ sauce (Costco) in the crock pot; Costco pot stickers; Erin's pasta salad from the 4th of July. Do you have Karen Cox's recipe for dip made from 2 cans chili (no beans) and 1 cream cheese in the crock pot served with fritos? It is good. Of course cheese ball! How about fondue?
Go hog wild at Costco. They have a ton of yummy finger food, and it makes it super easy for you!
I would do:
chips and salsa
veggie platter/dip
fresh fruit kabobs
a meat and cheese tray from Costco (with fresh rolls- also costco)
and costco mini cream puffs with some warm chocolate sauce for dipping.
I like Courtney's salsa idea. You could also add chili con queso if you wanted. You can never go wrong with chips and salsa! I would probably stick with the Mexican theme. If you want to serve a main dish, you could do enchiladas, tacos or tortilla soup. Then add some fruit and a dessert (something refreshing like key lime bars) and you've got it made.
chips and salsa are always a hit, the soup idea lindsey had is good because you could just keep it in the crock pot or on the stove, you could even do Tony's tiger tacos and leave the meat in the crock pot and that way people could eat whenever they want. If you go with the mexican theme I have a mexican rice recipe that is easy and yummy. Do brownies or some sort of cookie for dessert, easy and not too fancy.
chips and dip...the best:) I have a really good chip dip with cream cheese, corn, red bell pepper, olives, etc. Let me know if you're interested.
Costco all the way for sure. They have these good turkey wrap sandwich things that are always a hit whenever we buy them.
Fruit dip, the best I've ever had-- Marshmallow cream (1 jar) cream cheese (1 8oz) and marachino cherry juice enough to make it pink... with some costco strawberries-- always a hit. I also love to do 7 layer bean dip (with the taco seasoning mixed in the sour cream-- just enough to spice it up)... love deviled eggs... and wings are always a hit with the guys!
