Meal planning

My mom left town on Friday and will not be back again until Saturday.  Her leaving always makes me realize how lucky I have it.  She cooks the majority of the food and does the laundry and all that other stuff most people hate.   And while I don't mind doing that stuff while she is gone- I really hate planning the meals.  I don't mind the cooking- just the planning.  So what is your secret to meal planning? What is your favorite recipe? Help me out for the rest of the week.

I'm all about soup this week because it it cold and going to snow...I bet it's a different story where you are, maybe salad? I'm not that good at meal planning, never have been.

When it comes to meal planning, I like to cook whatever is in season. It always tastes the best and is usually priced well. I try 2 or so new recipes a week, so I have quite a collection. If there is anything specific you're looking for, let me know, and I'll send it to you. We love Mexican food, so tonight I tried this recipe http://www.marthastewart.com/recipe/smoky-beef-tacos?autonomy_kw=smoky%20beef%20tacos&rsc=header_1
We topped our tacos with lettuce, avocado, queso fresco, sour cream and salsa. It couldn't be easier, and the family loved it. I served with a salad with tomatillo-lime dressing and fresh fruit.

umm, can you pass any menu planning tips my way- maybe even forward me the 9 week one from your fried Krist?
I am really good about cooking dinner every night, but I would love to be more organized with the menu planning to save more time and money.
Since you asked for input, I guess I should leave some. I usually do one rice/ stir fry dish/ week. One pasta dish per week, and one mexican/ tortilla type dish. We're also a fan of:
homemade pizza (I used to by Trader joes fresh dough balls and freeze them- I'm sure they are easy to make as Betsy's daughter, but I have never found a recipe I can make in bulk and freeze. Now we use arabic flat bread).
soup (I'll send you the recipe of a veggie one my kids just devour)
breakfast for dinner- pancakes, scrambled egg/ bagel sandwiches
fish (the frozen tilapia or salmon at Costco with lemon pepper)
ok, now I'm just missing costco and I'm hungry.
