Recipe share

We live with my parents and my mom does 95% of the cooking. I've become a little spoiled. But I have tried to help more this summer and she has been gone 2 of the last 3 weeks. Here are some recipes, we have liked.

I am not going to lie. When my mom made this a few weeks ago, it was all I ate for dinner. It was warm. There was butter. Pretty much I need to start running again after that night.

The best part of this recipe is it makes 2 cakes. We made it last weekend for my mom's birthday. We enjoyed one. We covered the other and it is in the freezer to enjoy another day.

This was easy and very yummy. Made a lot as well so we could have leftovers the next day.

This recipe satisfies the whole family. Allie and I like it just like it comes. I can put some tofu in for Erich. And the sauce flavors the rice enough for Miss Laney.

Chinese Chicken Salad
1 1/4 packages ramen noodles, crushed
13 oz cashew pieces
1 1/4 green onions, chopped
1 1/4 (16 oz) packages shredded coleslaw mix

Dressing
1/2 cup + 2T white sugar
1/4 cup + 1T cider vinegar
1/2 cup +2T vegetable oil
1 T + 3/4 tsp soy sauce


In a preheated 350 degree oven toast the rushed noodles and cashews until golden brown. In a large bowl, combine coleslaw, green onions, and cashews. To prepare dressing whisk together the sugar, oil, vinegar, ramen seasoning, and soy sauce. Pour the dressing over the salad and add noodles, toss and serve. Best if dressing and noodles are added just before serving so the noodles don't get soggy.


This recipe is also very simple and light. Yet yummy. We usually add some Costco rotisserie chicken on top.
